Saint Francis of Assisi (1181 – 1226) was a Roman Catholic friar and the founder of the Order of Friars Minor, more commonly known as the Franciscans. He's known as the patron saint of animals, birds, and the environment, and it is customary for Catholic churches to hold ceremonies honoring animals around his feast day of October 4. The story of the turtle doves goes as follows. Saint Francis, seeing a young man who had brought turtle doves to the market,
said to him, 'I pray thee give them me, that gentle birds, upon which the Scripture
likeneth chaste and humble souls, may not fall into the hands of men that would kill them.'
The young man gave them over and Saint Francis spoke tenderly to them, 'O my sisters,
simple-minded turtle doves, why have ye let yourselves be caught? Now would I fain deliver you and make you nests, that ye may be fruitful and multiply according to the commandments of your Creator.'
